How to make Aloo Gobi - A Healthy Indian Recipe

Aloo Gobi is a popular vegetarian dish in Indian cuisine, featuring tender chunks of potatoes and cauliflower cooked in a flavorful blend of spices. This simple and delicious recipe is easy to make at home and is perfect for a quick and healthy weeknight dinner.

The dish is not only packed with flavour, but it's also a great source of fibre, vitamins, and minerals, making it a nutritious and satisfying meal option.

Ingredients:

  • 2 large potatoes, peeled and chopped into small pieces
  • 1 small head of cauliflower, chopped into small florets
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tbsp ginger, minced
  • 1 tomato, finely chopped
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 2 tbsp oil
  • Fresh cilantro leaves for garnish

Instructions:

  1. Heat oil in a large skillet over medium-high heat. Add cumin seeds and let them splutter.
  2. Add onion and sauté until golden brown, about 3-4 minutes.
  3. Add ginger and garlic, and sauté for another minute.
  4. Add chopped tomato and cook until it turns into a paste, about 2-3 minutes.
  5. Add all the dry spices (coriander, turmeric, red chili powder) and mix well.
  6. Add the chopped potatoes and cauliflower, and stir until they are coated with the spice mixture.
  7. Add about 1/4 cup of water, cover the skillet, and cook for about 15-20 minutes or until the vegetables are tender.
  8. Garnish with fresh cilantro leaves and serve hot with rice or bread.
