How to make Aloo Gobi - A Healthy Indian Recipe

Ingredients:
- 2 large potatoes, peeled and chopped into small pieces
- 1 small head of cauliflower, chopped into small florets
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tbsp ginger, minced
- 1 tomato, finely chopped
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- Salt to taste
- 2 tbsp oil
- Fresh cilantro leaves for garnish
Instructions:
- Heat oil in a large skillet over medium-high heat. Add cumin seeds and let them splutter.
- Add onion and sauté until golden brown, about 3-4 minutes.
- Add ginger and garlic, and sauté for another minute.
- Add chopped tomato and cook until it turns into a paste, about 2-3 minutes.
- Add all the dry spices (coriander, turmeric, red chili powder) and mix well.
- Add the chopped potatoes and cauliflower, and stir until they are coated with the spice mixture.
- Add about 1/4 cup of water, cover the skillet, and cook for about 15-20 minutes or until the vegetables are tender.
- Garnish with fresh cilantro leaves and serve hot with rice or bread.
